The oil
Corte Giara extravirgin olive oil is golden yellow in colour with green reflections. It has a delicate perfume and fragrant taste, with a slight aftertaste of almonds.
During the months of November and December, the olives are harvested by hand or with rakes and brought to the mill on the same day; they are then stone ground with the ancient and traditional system of cold pressing, thanks to which the olives maintains its natural and unaltered organoleptic properties.
The vinegar
Corte Giara red wine vinegar has a limpid rosy colour, with an intense perfume and delicate taste. It is properly acidic and harmonious, with a spicy note from the wood in which it is refined.
This Corte giara product is the result of careful vinegar production from a selection of wines from the Allegrini Farm. It is refined in 225 litre durmast oak bariques for a period of 36 months prior to bottling.
