At the drying facility ‘Terre di Fumane’
the grapes start to undergo a period of active dormancy

The drying facility called Terre di Fumane is a hive of intense activity at this time of the year. The grapes that will be used to produce Amarone 2018 are arriving regularly from the Allegrini vineyards. The harvest will end, as usual, with the grapes harvested in the upper hillside vineyards. At the drying centre, which can hold up to a million kilogrammes of grapes, the bunches are laid out to partially dry - a process called 'appassimento' in Italian - until next January, when, after losing about half their weight, they will undergo pressing. This period is also referred to as 'active dormancy'.
